Stick on an extra earth on the gear box to chassis as i had this problem, and since doing that its been fine, does your speedeo and rev counter just drop off then comes back?

asll i done was remove the bit where it screws/plugs in and then it didnt do it as much, then i stuck another earth on from the front of the gearbox to the slam panel, and has been fine since, i used a earth cable from a amp wiring kit, all been good since

The speedo on the dash is wired directly to the vss. There is only 3 wires, a 12v live, an earth and a 'switch' live which is the wire that goes to the dash. It does also split and go to the ecu but don't worry about that, doesn't affect the dash.

Get a multimeter and test you have a good 12v supply, then test the earth. If they are ok its likely to be the vss, the wire to the dash or the dash itself. To test the vss you really need an oscilloscope. The wire goes into the blue plug I think on the back of the dash so you can test continuity of the wire there. Dunno how you'd test the dash though.

it was fine until the dash was changed to my led metal monkey one. So thinking it could be something to do with dash or earth?

Yep, as said it's likely to either be the VSS itself or the lack of an Earth connection. Yes

You shouldn't need to add extra Earth cables really, just ensure the current ones are present and the connection points are clean and tight. Yes

Would the VSS be the cause for my speedo to zip straight to almost max speed just after start up, it goes back down after a mo ?

I'm not sure, do they? How? I suppose the only way would be to run the vehicle in the brake rollers and ensure that the speed starts to raise.

wasn't aware of that as it'd involve mot testers driving the car..

we only run cars stationary for emissions / testing exhaust and brake testing but that's it

Perhaps when they jack the car up on the subframe to give things a shake and a wiggle they will run the car in the air to see if it moves?

Or look down at the dash when they drive the car on to the ramp.
