Noticed that the race car hunts at idle a little bit, moving between 900 and 1000 RPM and when I blip the throttle it's slower to respond than normal. It used to go up and down the revs quite quickly but now it feels more like a standard car (it has a lightened flywheel and crank pulley).

Any ideas?

Dirty ICV and/or throttle body would be the first port of call.

And or dirty air filter especially if its an induction filter,,or exhaust blowing slightly mine hunts a little with any of these
If you have a loud exhaust you wont hear the blowing re sealed mine the other week no more hunting

s**tty dirty air filter leads to dirty icv etc

It was the ICV. Took one off one of the spare inlets I have and it is much better now. Cheers guys!
