Not actually sure what my issue is so help, please.

i have paid this issue off for a few weeks now but today it had me worried,
my issue is when driving and putting the clutch in the revs will bounce between say 300 and 1000,
today is when this really became a problem the revs completely dropped out and the engine stopped.

does anyone know if this is a clutch issue and idler issue or what is the issue?

Sounds like the idle control valve.

Classic icv id say may start stalling at junctions as it gets dirtier

stock XSI, i do have a loose hose could this be an issue?

i'll add to this as well, any other sensors i should replace at the same time, shipping kills me.
i should clean / replace the one in the gear box for speed anything else?

nothing has ever been replaced all original and aging

Get a map sensor they often play about n there cheap
Having said if you have a loose hose do that first its probably your main issue

Sounds like a classic ICV mate.

I don't think shipping will be that bad, I think you could get one in a padded envelope and Royal mail reckons under 10 pounds sterling for this.

You could order one to my address from Euro Car Parts or something and I'll drop it in an envelope if you like and send it via Royal Mail.

Could this be the problem, is this a problem?
are those wires connected to the ICV?
