i'd first of all do a compression test across all 4 cylinders, should be within 10 % of eachother. if there all good i'd take the oil pipes off, pressure wash them out so there nice and clean and refit them, change the engine oil, coolant and see if it comes back.

Does the car do a lot of short journeys and never really get to go anywhere?

If so it's normal for there to be gunk as long as it's not really thick and blocking the pipes up I wouldn't worry about it (do a compression check and keep an eye on it). Up to you if you want to clean it out but you could just take it on a really long drive (couple of hours or more) and the heat should get most of the water vapour out of the system.
