I've got a 1.8 XS and it the temperature gets quite high everytime I'm stood still for over 2 or 3 mins, basically in traffic. Goes up to about 95-100 at times.

I've read that its normal for the 6 and rallye but I was wondering if the 1.8 is the same.

What temperature should the fan come on? Doesn't ever seem to come on

First and foremost..

check your coolant level?

Coolant level seems fine. No signs of any oil in there either so doesn't seem to be anything major.

I just thought it could be a dodgy sensor not setting the fan off?

So as long as it doesn't go over 97, it's pretty normal

I think it is a bit mental, and depends heavily on traffic conditions as well as the weather.

It does it in all weather conditions and as soon as the car is stationary for around 2 minutes, it just shoots straight up

Warming up when stationary is OK.
When at ~100 C (depending on the gauge precision) you should hear the fans kick in at low speed (or see them if you open the bonnet).
If they don't then there is a fault to find.
Until you find out, you can always use the AC (if the fans do work).

Sorry, I am only familiar with phase 1s, and there is no red there. 110 C is still in the "safe" zone, with two more lines to go. I would be nervous if the needle was always above the 110 C line. Specially in winter ...
