Would a leaking heater matrix and water pump account for a tiny amount of pressure in the cooling system when cold?

It is a barely audible hiss when I open the radiator cap.

Please tell me it can't be a head gasket No

There are no other signs of a head gasket failure that I can see.

most likely to be hg, leaks elsewhere would cause loss of pressure.

So a head gasket is the only possibility, nothing else?

If there is residual pressure in the coolant system when fully cooled say next morning then yes HG beginning to fail. Some engines run like it for some time but it will only get worse over time.

My HG went, left residual pressure in the cooling system even after 48 hours. When you ran it with the rad cap off it would merrily bubble away the whole time the car was running.

As said, there should be no pressure in there at all when fully cooled.

I'll do a compression test tomorrow and see what that says.
