The thing to remember is although the job is quite a bit less than 10 hours hands on time they will have your car sat around in the way with no cylinder head when its being skimmed/tested so most garages will be factoring this in when quoting 'labour' time.

Does anyone know where else in the Leeds area I could go where it'd be cheaper?

I know it is a real downer to have to spend this money but it will be worth it for the future. To that end, I would strongly advise against cutting corners, e.g. missing out the head skim, as without doing it there is a risk the new gasket might not last long if the head isn't true. Definitely do cam belt, water pump and tensioners too, as it is not worth taking a risk with these either.

Ref the labour they are probably adding the cam belt change time (2.7hrs Autodata) onto the 6.8 for head gasket and rounding up to 10, although I would have thought they are taking that stuff off anyway so the cam belt etc would only add half an hour max to it, but I'm not a real mechanic.

the 6.8 would include taking the belt off, if they are adding the belt time then they are either cheeky bas**rds or dull as feck.
