I've removed the a/c heater control unit from my track car so lost the ability to manually turn the radiator fans on and off.
I'd like to still have that ability so i was thinking about splicing into the relay feeds and have a switched earth to the two high speed relays? (Pin 2 on #27 on the below diagram).

Is this the recommended way of doing it or is there a better option?

that's for a non aircon two speed setup, you'rs will be different.

best bet is probably an early TD twinfan setup and leave the manual switches out of it, no need if it works as intended.

I did a pikey approach and fitted a relay inline with the brown (from memory) thermostat sensor, with a switch in the dash that opens up that relay making the radiator fans kick in. (Emulates pulling the plug off the sensor).
