I must be looking at the wrong websites or something but is there anywhere that sells a complete Gasket and oil seal set?

Craig,

Not as such No

IMO, you're best off sticking to Peugeot.

Here is a list of the gaskets I would typically replace when re-building an engine, part numbers are in brackets:

Crankshaft Oil Seal [cambelt end] [0326 22]
Crankshaft Oil Seal [flywheel end] [0127 28]
Seal for Oil Drain Cover [Flywheel End] [0147 12]
End Bearing Cap Seals [0127 05]
Camshaft Oil Seals [0236 44]
Oil Cooler Seal [1104 24]
Thermostat Housing Gasket [1340 33]
Thermostat Gasket [1340 48]
Inlet Manifold Gasket [0349 G1]
Exhaust Manifold Gasket [0349 F4]
Valve Stem Oil Seals [0956 38]
Oil pump sprocket 'O' ring [0514 92]

The only thing missing is the head-gasket, as we use our own uprated MLS items - which I would recommend if this is for your S/C'd engine.
