Are you on about that ones that actually connect to the seat?

If they are attached to the seat then its the earth for your side air-bags and pre-tensioners! This wont cause the car not to start, I recently swapped front seats with another member off here and his weren't connected at all yet his car ran fine..... I did however connect them in my car, but had to use spade connectors as the plugs are sh*t and break! If its there, connect it, is my rule! I would unbolt the seat from the car first with a torx bit though, makes life a lot easier!
