Whatever you choose to do, I would recommend an old t-shirt in place of the head gasket between the head and the block to cushion against scratches to the surfaces.
We got mine all back together today, and it started first time! It's been a month since we started, one day a week and had it going at lunchtime today! RESULT!
Still some rattles going on from somewhere, so tomorrow will be inestigating them. Carl's exchange head guaranteed not to tap, and we were so careful with the timing pins etc, so very much doubt it's that.
