Right guys , since ive ever had the car when in free flowing traffic , Water temp is reading 75 , Some times tad lower on cold days , But if in traffic etc gets up to 100 no problem , Does this sound like stuck thermo ?

Should be a little warmer than 75 too I'd have thought. Saying that it's still nothing to worry about. TBH it's probably not 75 anywayLOL

My rallye does something similar - gauge reads 80-82 when driving but in traffic it gets to 100 quite quick the fan cuts in and it seems to come down abit but not a lot - when i drive of it goes back to 80 pretty quickley - I guess this is right?

spot on. Fans should take it down to about 90

Even with air con on it should still go no lower than 80 when warmed up, as this is the temp that a working thermostat allows water through

What if the air blowing over the engine on the motorway cools it down further?

Wouldn't make any difference as the stat would close a little to maintain ~80 degreesSmile

So your saying 80 ? never sits at that when im moving 75 as i say , in traffic never goes to 90c once fans kick in , 95 i say !!

The stat maintains a temperature of ~80 degrees. If your gauge reads lower then I'd say either your gauge/and or sender is wrong or your stat is slightly wrong.

Anyway, 75-80 degrees, what does it matter??LOL

With the stat fully closed, can the temp go below 80 degrees if there is enough air passing over the engine, especially with both fans on half speed?

Mine does the same.....After say 5 minutes in traffic the temp will slowly start to creep up and carry on going up. Saying that tho, my rads nackard lol!...I just bodged a manual fan switch in for the time being untill i can fit the nissens...
